Classic Cabernet aromas of black pepper; cedar, slight herbal and berry notes manifest themselves in the nose. This is a medium-full bodied wine with a soft balanced mouth feel and flavors that are similar to the aromas, which lead to a pleasing soft berry-vanilla finish. |

Cabernet Sauvignon 80% blended with 20 % Malbec.
Manual picking is followed shortly by destemming and crushing. We often cold soak many lots for 2-3 days. Fermentation is started with the inoculation of selected yeasts in stainless steel tanks at controlled temperatures. Gentle and periodic pump-overs of the wine occur during fermentation and the length and number of these are based upon the stage of fermentation, the history of each lot of grapes and vintage considerations. Usually we press slightly before dryness and using only the lightest pressed fractions blended with the free run. Fermentation usually finishes a few days after pressing. The wine is aged and then prepared for bottling usually by mild fining with egg whites.
